Spicy Pork Ribs
❤️ About This Recipe
The pork ribs are a flavorful cut that absorbs the flavors of the braising liquid they are cooked in. They get incredibly tender by the slow cooking without shredding and have enough marbling to keep the meat moist.
The flavor-packed sauce is made of oyster sauce, soy sauce, rice wine, and sugar with a hint of fresh ginger. The addition of chili powder and fried garlic at the end adds a final burst of flavor.
I love these spicy ribs. Each bite is packed with delicious flavor and exciting heat. Serve with a cold bottle of beer and plenty of kitchen paper. 🍺😍
🍳 Ingredients for Spicy Ribs
- Pork ribs: Use the short ribs for this recipe. Cut them into about 5-10cm in length. You can easily find this cut in Asian grocery stores.
- Chilli powder is optional if you don’t like spicy foods.
- Oyster sauce: Oyster sauce adds a savory, seafood-like flavor to the dish, but it can be omitted if it is not available.
- Garlic: You can use store-bought fried garlic instead of frying your own.
🔪 Instructions
- Frying the garlic: To save time, you can use store-bought fried garlic instead of frying your own.
- Parboiling pork ribs: This process helps to remove any impurities or unwanted flavors from the ribs, resulting in a cleaner, more neutral taste.
- Braising pork ribs: The long, slow cooking process allows the ribs to absorb the flavors of the sauce and makes them fall off the bone tender.
- Caramelizing pork ribs: This is to thicken the sauce and intensify the flavor.
- Seasoning: Add garlic and chilli powder to give the dish an extra kick.
Note: For steps 4 and 5, to avoid the sauce sticking to the bottom of the pan and becoming bitter, it is best to use a non-stick saucepan.

I’ve made this recipe twice – once with regular ribs, once with country style ribs, and always with chili powder/flakes. I love it so much! The meat is so tender, and the taste is so flavorful. Thank you for posting this recipe Lei.
