Frying garlic: Heat the oil and garlic in the non-stick saucepan over medium heat. Fry the garlic until golden. Drain the fried garlic and reserve the oil.
Parboiling pork ribs: Bring water to a boil in the saucepan. Put the pork ribs into a saucepan and boil for 5 minutes. Discard the hot water and wash the gunk off the pork ribs with cold water.
Braising pork ribs: Add pork ribs, ginger, soy sauce, oyster sauce, sugar, rice wine and water to the non-stick saucepan. Lower heat to a simmer, cover with a lid, and continue braising for about 60 minutes.
Caramelizing pork ribs: Turn to high heat, take the cover off and let the liquid evaporate and thicken. Add the oil from step one, turn and mix the pork ribs until the sauce is browned and sizzling (about 5-10 minutes).
Seasoning: Mix in the chili powder and fried garlic. Enjoy! :)
