My brother isn’t much of a cook, but he proudly claims this shrimp and egg stir fry as his signature dish, and it’s the only dish he can make. 🤭

Shrimp and eggs, these two basic ingredients go really well together and make a popular homemade Chinese dish. The shrimp has a slightly sweet buttery seafood taste, making the eggs taste even better. The cooked spring onions add extra flavour to the dish.

This recipe is incredibly simple; even those with minimal cooking experience can easily pull if off, just like my brother. 😊

  • Shrimp: Shrimp with shells provide a better flavour and texture, whereas frozen, shelled shrimp tend to lose their flavour during factory processing.
  • Eggs: For a moist and tender scrambled egg texture, whisk in two tablespoons of water while preparing the eggs.
  • Spring Onion: The green part of the spring onion cooks at a similar rate as the eggs. If you’re including the white part, be sure to slice it thinly.

🔪 Instructions

  1. Preparation: Marinate shrimp with a pinch of salt and rice wine for 5 minutes. Whisk eggs with a pinch of salt and 2 tablespoons of spring onions.
  2. Cooking: Heat oil in a non-stick pan over medium heat for a minute. Add shrimp and cook until slightly browned and sizzling. Pour in the egg mixture, allowing it to cook without stirring for 10 seconds. Stir and mix thoroughly. Cook eggs as desired.
  3. Finishing: Garnish with the remaining spring onions and serve.

  • 10-15 middle size fresh whole shrimp (peeled and deveined)
  • 3 eggs
  • 3 tablespoon spring onion (green parts) (finely chopped)
  • 1 pinch salt
  • 3 tablespoon olive oil
  • 1/2 tablespoon rice wine
