Watercress and Goji Berries as superfoods have been increasing in popularity in recent years. They have been used to treat high blood pressure, boost metabolism and energy in Chinese medicine for thousands of years. The raw watercress just like mustard and radishes, has a potent peppery taste. But when you cook it, the watercress releases a surprisingly flowery aroma.
Watercress and Goji berry pork rib soup is one of the tasty Chinese food therapy. It is a fresh and delicious soup, full of flavor and brimming with nutritional goodness. The meat is very tender and almost falling off the ribs and the Goji berries give a more delicate and sweet flavor. The watercress only needs to be added towards the end of the cooking to retain its vibrant green color and add a fresh flowery taste to the soup.
Watercress and Goji berry pork rib soup
- 500 g pork ribs
- 1.5 L water
- 2 slices ginger
- 1/4 cup Goji berry
- 200 g watercress
- 1/2 cup rice wine
- 2 teaspoon salt
- Parboiling: Bring water to a boil in a sauce pan. Put the pork ribs into saucepan and boil for 5 minutes. Discard the hot water and wash the gunk off the pork ribs with cold water.
- Place pork ribs, ginger and Goji berry in a stock pot and cover it with water. Season with rice wine and salt. Simmer for 1/2 hours.
- Add watercress and cook for 10 minutes and serve.
