In this rainy and cold Auckland winter, after a whole day of working, you want a dish that is easy to make and its warm and
tasty. Try this Thai yellow curry, add your favourite meat and veggies together, more of this, less of that, doesn’t really
matter, it will still bring you the magic.
- Heat one tablespoon of oil in a saucepan and add one sliced onion utill lightly browned.
- Add two tablespoons of yellow curry paste, one chopped potato, one chopped tomato,400ml coconut milk, 2 kaffir lime leaves(optional) and chicken pieces.
- Low heat, stir and simmer for 10-15 minutes until the potato and chicken are fully cooked.
- Turn the heat up high, stir to reduce the water until the sauce is thick.
