Chinese Beef, Tomato and Egg Recipe

Ingredients

  • 2 tbsp oil
  • 150 g ground beef
  • 3 tomato cut into small pieces
  • 2 egg whisked
  • 1 tbsp soy sauce
  • 1 tbsp corn flour
  • 2 spring onion chopped
  • 1/2 cup water

Instructions

Pan-fry the ground beef

  • Heat 1 tablespoon of oil and ground beef in a pan over medium heat and cook until lightly browned.
  • Stir in the 1/2 tablespoon of soy sauce and fry for about 10 seconds to release the aroma. Set the ground beef aside.

Fry the eggs

  • Heat 1 tablespoon of oil in a pan and add the white part of the spring onion. Fry until lightly browned.
  • Pour in the whisked eggs and fry, breaking them into small pieces as they cook.

Combine everything

  • Add the tomatoes, ground beef, 1/2 tablespoon of soy sauce and ½ cup of water to the pan. Place the lid on and cook until the tomatoes are tender.
  • Mix the corn flour with 3 tablespoons of water, then reduce the heat and stir it in slowly to thicken the sauce.
  • Add the green part of the spring onion. Serve hot over rice, noodles, or your favourite pasta.

Notes

  • Tomatoes: Use ripe tomatoes for a naturally sweet flavour. If they’re a bit sour, add a pinch of sugar. You can peel them for a smoother texture if you like.
  • Ground beef: Higher-fat ground beef adds more flavour, but choose what works for you. Adjust the amount as needed, or leave it out entirely for a vegetarian version.
  • Soy sauce: Adds rich umami flavour. Fry it with the ground beef in oil for about 10 seconds to release a delicious aroma. If you don’t have soy sauce, you can substitute it with a pinch of salt.
  • Corn flour: Used to thicken the sauce. Mix it well with water first, and then add it gradually while stirring in the sauce over low heat to prevent clumping.
  • Season with a pinch of sugar to adjust the sweetness to your taste.
  • You can add a little tomato paste to boost the flavour.
  • If you’re tossing this with noodles or pasta, feel free to add a little extra soy sauce or salt; otherwise, it might taste a bit bland.
  • To spice it up, sprinkle in black pepper powder or chilli flakes.
