Ingredients

  • 3 tbsp oil
  • 1/2 cup pork belly thinly sliced
  • 3 dried red chillies roughly chopped, optional
  • 5 large leaves of cabbage hand-shredded into bite sized pieces, washed, and thoroughly dried
  • 1 tbsp soy sauce
  • 1/3 teaspoon sugar
  • 1 teaspoon fried garlic

Instructions

  • Add the oil (2 tablespoons) and pork belly to a frying pan over high heat, and sear the meat until slightly caramelised. Add Chilies and fried garlic and stir-fry for another 10-15 seconds.
  • Add the cabbage in, make a quick stir fry then add soy sauce and sugar and cook until the cabbage just starting to wilt, about 2 minutes.
  • Stir in one tablespoon of oil and Serve hot.

Notes

    • Cabbage: Tear the cabbage by hand, keeping the soft leaves and getting rid of the tough parts. Tearing the pieces creates more surface area allowing them to soak up more sauce and flavors.
    • Pork Belly: Pork belly goes nicely with cabbage; alternatively, you can use bacon or skip it for a vegetarian option.
    • Fried Garlic: I used pre-made fried garlic for convenience, but you can fry freshly chopped garlic for more flavor if you prefer.
    • Oil: Stir-frying usually needs more oil; you can opt for olive oil as a healthier option.
    • Preparation is Key: Have all your ingredients ready before heating the oil since stir-frying is a quick process. The total cooking time may be as short as five minutes, so efficiency is crucial.
    • Prepare Cabbage: Ensure the cabbage is thoroughly drained before frying to prevent steaming caused by water on the leaves.
    • Serving Size: Opt for smaller serving sizes when stir-frying as it ensures the food is fully cooked and sizzles quickly.
