Savory Beef Hand Pies
🥞 Ingredients For Ground Beef Pastry
- Ground beef: Ground beef with 15-30% fat is ideal for this recipe. The lean beef can easily be too dry after baking.
- Corn flour: We call it corn flour but other places call it corn starch. It is an ingredient used to thicken the sauce and add softness.
- Sesame oil: Sesame oil has a nutty flavor, but also adds smoothness to the meat.
- Water: Add the water little by little while you string the ground beef so it can be absorbed gradually. The ground beef from our supermarket is very dry and can take in lots of water. Always adjust the amount of water according to the moisture in the ground beef. If the ground beef is too moist, add less water.
📍 Recipe Notes:
- Corn flour (corn starch) and water mixture are to retain the moisture in the filling.
- The water might seem excessive but the ground beef can absorb lots of water once you stir the mixture. Stir for about 5 minutes until it becomes a moist and sticky mixture.
🥣 Instructions
Step One: Prepare the filling mixture
- Mix corn flour, water, soy sauce, ginger, sugar, and sesame oil in a small bowl. Add the sauce to the beef and onion while stirring the mixture until the sauce is completely absorbed. (Add the sauce little by little so they can be absorbed easily)
Step Two: Assemble and Make the hand pies
- Cut the pastry into about 8cm squares, place the beef mixture on the pastry squares, cover then crimp the edges of the pastry with a fork to seal it shut, and place on the baking paper. Brush with egg yolk and sprinkle with sesame seeds.
Step Three: Bake
- Preheat the oven to 200C. Bake for 20-25 minutes or until the pastry is golden brown.

Hi,
Can I freeze them before I bake them or bake them than freeze them?
Thank you
You can freeze the meat mixture, but it’s best not to wrap it in puff pastry before freezing, as the juices may make the pastry soggy.
Is the meat filling raw or sauteed first?
They are raw.
From the picture, it seems that a second sheet of puff pastry is placed on top of the filling and crimped to close. Is that correct? Thank you.
Yes, that is right. 🙂
Yum
maybe your ground beef is different from ones here. The ground beef I bought from supermarket can take more than 1/3 cup of water. They are dry ish.
