Ingredients

  • 4 tablespoon oil more or less to your liking
  • 4 eggs
  • 1 tablespoon spring onion green parts, finely chopped
  • 1 pinch salt
  • 1 cup onion chopped
  • 1/2 cup bell pepper chopped

Sauce

  • 1/2 tablespoon cornstarch
  • 1/3 cup water
  • 1 teaspoon soy sauce
  • 1 teaspoon oyster sauce

Instructions

  • Frying the Eggs
    - Whisk together the eggs, salt, and spring onions.
    - Heat two tablespoons of oil in a non-stick pan over medium heat, then add the egg mixture. Cook until firm, then break it into small pieces and set aside.
  • Frying the onions and bell pepper: Add two tablespoons of oil, onions, and bell pepper to the pan over medium heat and cook until cooked through but crunchy.
  • Mixing Everything Together: Lower the heat to low-medium, then add all the eggs and sauce to the pan. Mix everything well and serve.

Notes

  • Since eggs and the sauce with cornstarch can be sticky, I recommend using a non-stick pan for better cooking results.
  • The cornstarch tends to settle at the bottom of the sauce once mixed, so be sure to mix the sauce well before pouring it into the pan.
  • Lower the heat in step three, as the cornstarch can form lumps if the heat is too high. Keeping it on low heat ensures that the sauce cooks evenly.
  • You can add prawns, sausage, or ham to boost the protein in this dish and cater to your needs. Fry these ingredients separately and mix them in during step three.
