Ingredients

  • 300 g fresh oyster meat
  • 2 Tbs sweet potato starch or corn starch
  • 1/2 Teaspoon salt
  • 2 Tbs oil
  • 2 eggs beaten
  • 1/2 cup coriander chopped

Instructions

  • Prepare Oysters and Mix Ingredients: Wash them in cold water, drain well, and mix them with sweet potato starch (or cornflour), salt, and coriander.
  • Cook the Oyster Mix: Heat some oil in a non-stick skillet over medium-high heat. Pour in the oyster mix and cook for about 5 minutes.
  • Add Eggs and Complete Cooking: Add the beaten eggs, cook for about 30 seconds, and then flip the omelet. Continue cooking until the oysters are well-cooked, which usually takes another 2-3 minutes.
  • Garnish and Serve: Finish it off by garnishing with fresh coriander and serve with chili sauce. Enjoy!

  • Preparing Oysters: When preparing oysters, it’s common to find small shells. Make sure to remove them while washing.
