Ingredients

  • 200 g chicken mince
  • 5-6 mushrooms finely chopped
  • 1/2 cup coriander chopped
  • 1 tablespoon corn flour
  • 1 teaspoon white pepper powder
  • 1 punch salt
  • 2 eggs
  • 1 tablespoon oil
  • 1 tablespoon fried shallot optional

Instructions

  • Cook the ground chicken: In a saucepan, add oil and chicken mince, and cook over medium-low heat until the chicken is cooked. About 5-7 minutes.
  • Cook the soup:To cook the soup, simply add the chopped mushrooms, 4 cups of water, and a pinch of salt. Bring the mixture to a simmer while stirring. Once simmering, cover the pot, reduce the heat to low, and let it cook for approximately 20 minutes.
  • Thickening the soup: dissolve corn flour in 1/3 cup of water and slowly incorporate it into the soup. If desired, you can also add eggs at this stage.
  • Seasoning and serve: Turn off the heat and stir in the chopped coriander, white pepper powder, and fried shallots (optional). Now, it’s ready to be served and enjoyed!

Notes

  • Thickening Agent: If you prefer a thicker soup, you can increase the amount of corn flour-water mixture gradually until you achieve the desired consistency.
  • Garnish Options: Get creative with your soup toppings. Try spring onions, crunchy peanuts, or a drizzle of chili oil for added flavor and texture.
  • Storage: Consider making a larger batch and freezing it in smaller portions for convenient meal prep on busy days.
  • Vegetarian Variation: For a vegetarian version, substitute ground chicken with tofu crumbles. Use vegetable broth instead of chicken broth and adjust the seasoning to taste.
