Cook the ground chicken: In a saucepan, add oil and chicken mince, and cook over medium-low heat until the chicken is cooked. About 5-7 minutes.
Cook the soup:To cook the soup, simply add the chopped mushrooms, 4 cups of water, and a pinch of salt. Bring the mixture to a simmer while stirring. Once simmering, cover the pot, reduce the heat to low, and let it cook for approximately 20 minutes.
Thickening the soup: dissolve corn flour in 1/3 cup of water and slowly incorporate it into the soup. If desired, you can also add eggs at this stage.
Seasoning and serve: Turn off the heat and stir in the chopped coriander, white pepper powder, and fried shallots (optional). Now, it’s ready to be served and enjoyed!
